Meats can be white or red and a good asado is always accompanied by offals from the cow as kidneys, black pudding, Chinchulines, gizzard, guts and chorizo. The main one are the chorizo sandwiches, which are known as “Choripan” or “Chori”. The barbecue can be also accompanied by salads, grilled potatoes and the great provoleta, a grilled provolone cheese. To make the perfect barbecue, the prestigious Argentine wines cannot be missing, especially reds which are ideal for meat. The asado does not consist only on cooking the meat but it is also a social gathering, gathering with friends, outdoors or under sheds which protect you from the sun and rain. This is one of the greatest traditions in Buenos Aires and it is very common that while preparing the meat, the famous and great picadas are prepared, including various cheeses, cold meats, sausages, olives and peanuts.
